From pasture to table: flavors that tell the story of the mountains

We produce organic raw milk cow's and goat's milk cheeses, using
traditional methods and original recipes that reflect the story of our territory
and seasonality.

Our production represents excellence in the Valtellina region, thanks to
unique products that are the result of a conscious choice: to prioritize quality
and originality in order to offer authentic and unmistakable flavors.

Organic cheeses, biodiversity, and territory

The biodiversity of our pastures, rich in wild herbs and flowers, nourishes our animals and gives our milk unique flavors, which are preserved intact in our organic cheeses.

We have chosen to raise native breeds from our region, Original Braunvieh cows and Frisa goats, as they are well suited to grazing and produce small quantities of high-quality milk.

Our cheese production varies throughout the year. In summer, we focus on producing alpine cheeses with an intense and authentic flavor, made in the pastures at 2116m. In autumn, with the low-altitude pastures, we create unique cheeses such as our Scersciulin: a soft cheese wrapped in chestnut leaves. In winter, the animals' diet changes, the cows return to the barn, and hay replaces grass. During this period, we produce cheeses that are ideal for long aging, such as our Semigrasso Stagionato and Scarpatetti. In spring, the meadows surrounding the farm in Sondrio begin to bloom again, and the cheeses made from spring pasture have an unmistakable aroma and color.
